Chocolate And Fig Protein Muffins

(Serves 9)

These protein muffins seem to be invented by Hrithik Roshan’s diet consultant Marika Johansson. During the filming of ‘Krrish 3’ Hrithik was said to munch on these tasty snacks to keep his blood sugar levels stable and keep cravings at bay whilst getting a healthy dose of nutrients.

Ingredients

  • Wet
  • 3 egg whites
  • 4 fresh figs, blended into a paste
  • 1 tablespoon Probiotic yogurt
  • Dry
  • 40g Rolled Oats, made into flour
  • 40g Rolled Oats
  • 1 tsp Stevia Powder
  • 20g Quinoa
  • 5 scoops Chocolate flavoured protein powder
  • 10 Walnuts
  • 20g Ground almonds
  • 1 tsp Flaxseeds
  • 1 tsp Cinnamon powder
  • 1 tsp Baking powder
  • 2 tbsp Cocoa powder (optional)

Method

  1. Pre-heat oven to 200ºC. Take a big bowl and mix all the dry ingredients together.
  2. Use a processor to blend the wet ingredients well. If you are a vegetarian and do not eat eggs, you can add an extra spoon of probiotic yogurt instead of the eggs.
  3. Add the wet ingredients to the dry ingredients’ bowl. Mix them all together to make a smooth batter. It should be evenly blended. If it is too dry, add one or two tablespoons of water to get the right consistency.
  4. Grease the muffin tray. Pour the batter into the tray. Sprinkle with some rolled oats. Place the tray in the middle of the oven for 8-10 minutes. You can store them for a few days in the fridge.
