Maria from Adrian requested a recipe for Rhubarb Bread through my blog site. Would everyone please share their favorite ones?

 

Janice from Wauseon says her Apple Cake recipe is easy to make. Cletus from Tecumseh sent in his recipe for Clete’s Apple Jack. Bessie from Adrian hopes her recipe for Apple Cookies will be helpful to anyone wanting to make a recipe with delicious Michigan apples.

 

APPLE CAKE

 

1 c oil

 

1 t baking soda

 

2 c sugar

 

1 t vanilla

 

3 eggs

 

2 t cinnamon

 

3 c flour

 

4 c sliced apples

 

1 t salt

 

1 c walnuts

 

DIRECTIONS: In a large bowl, combine all ingredients and mix thoroughly. The batter will be stiff. Place in a 9 x 13 inch pan. Dot with butter and bake at 350 degrees for 45 minutes. Enjoy.

 

 

CLETE’S APPLE JACK

 

6 McIntosh apples

 

1 3/4 c sugar

 

1 t salt

 

1 t baking soda

 

2 c flour

 

3/4 c canola oil

 

3 eggs, beaten

 

Cinnamon to taste

 

DIRECTIONS: Peel, core and slice apples into a large bowl. Add sugar, salt, baking soda, flour, oil, eggs and cinnamon. Pour batter into a greased 9 x 13 inch pan. Bake 30 to 35 minutes at 350 degrees or until an inserted toothpick comes out clean.

 

 

APPLE COOKIES

 

1 1/2 c brown sugar

 

1/2 c shortening

 

1 large egg

 

1 t baking soda

 

1 t cinnamon

 

1/2 t nutmeg

 

1/4 t ground cloves

 

1/4 t salt

 

1/4 c milk

 

2 c flour, sifted

 

2 c grated apples

 

DIRECTIONS: Cream shortening. Add brown sugar and egg. Mix baking soda, cinnamon, nutmeg, cloves, salt and flour together. Add to creamed mixture along with milk then stir together. Stir in grated apples. Drop dough by spoonfuls onto cookie sheets. Bake at 350 degrees for 10 minutes. Cookies are good drizzled with a powdered sugar glaze. Note from Lynn: To make a powdered sugar glaze, mix 1 cup of powdered sugar with 1/4 teaspoon vanilla and just enough milk to bring to a drizzling consistency.
